How This Works
Volume conversions use standard US cup (236.6ml) and UK/US tablespoon (14.79ml) measurements. Note: Australian tablespoon = 20ml. Weight conversions use exact values: 1 oz = 28.35g, 1 lb = 453.6g. Temperature: °C to °F = (°C × 9/5) + 32. Ingredient weights vary — a cup of flour can range from 120g (sifted) to 150g (packed).
UK recipes traditionally use weight measurements (grams and ounces) which are more precise for baking. US recipes use volume (cups, tablespoons, teaspoons). The problem: "1 cup of flour" can range from 120–150g depending on how you scoop it. For baking, always use a kitchen scale when available — volume measurements for solids introduce significant variability. For liquids, cups and ml are practically interchangeable.
